Canning and gardening
All said and done, I canned eight quarts and fifteen pints of tomatoes. All of them separated which is supposed to be about that pre-cooking but I was careful to not do any of that, so I must be doing something else wrong. I'm looking forward to tomatoes all winter and hope they turn out as well as I hope.
We're looking to do corn next by freezing instead of canning. We'll see how that goes. It certainly seems faster.
One of the advantages of having all the vegetables on the edge of the driveway is that I can look at them as I leave in the morning and arrive in the evening. It's amazing the amount of growth each day. It's also amazing how much water...
The tomatoes all seem to have a good amount of sprouts except the black tomatoes which are definitely growing the slowest, though they still have some. None of them look remotely ready to pick, but I'm happy just to have them growing.
The eggplants, on the other hand, are completely out of control. There are at least ten and more seem to spout every day. The ones that are there already are growing at least an inch a day. Josh is looking forward to many days of eggplant ahead.
The basil and mint have fully recovered and are doing well. The chives are okay, but I should harvest them to keep them healthy.
The parsley and oregano are also doing well but not as well as the basil and mint. I will harvest some of these to keep them going.
I moved the dill that was on the windowsill -- where it was doing quite well -- to outside because it was attracting small bugs. It is now dead.
The zucchini plant has no signs of bearing any fruit at all but we pick squash blossoms at least every couple days. These were the first that we harvested. I'm still cooking them Jacques-style, but for a much shorter time so you can really taste the fresh squash flavor. Delicious! We are spoiled!
