Nothing wrong with a homemade Chinese dinner. It was the same day I did the pot roast for lunches, so dinner was pretty late, as I wanted to finish and pack up the lunches for the freezer before I started dinner.
Just the standards: chicken and eggplant, beef with scallions, beef and tofu.
Some overwatered rice -- still figuring out the proportions since I lost my rice measurement cup -- and some of my dad's spicy sauce. Yum.
