Pickling green tomatoes

I don't normally pickle green tomatoes, but we ran into H last weekend at the market, and she mentioned that they pre-ordered green tomatoes and beets for pickling. Josh was interested in pickled green tomatoes, something a little less sweet than the usual.

So I pre-ordered ten pounds from Burge, too, and they looked pretty good. Of all the recipes we had, I went with a recipe from Hugh Acheson's book.


Hugh's recipe calls for slicing the tomatoes instead of wedges. Since I had two wide mouth jars, I did two that way -- and let me tell you, it was awkward to get them into the jar! I got two tomatoes per jar. They do look pretty.


And then for the other four jars, I did wedges. Easier to put in the jar. You can see my stacks of slices here at the top of the board.


Here are my pickles! This is the first batch that I've done in a regular pot instead of in the canner. It was a little awkward but it was definitely faster.

I still have a bunch of tomatoes left over so I might make chow chow or something. Have to figure that our pretty soon!
