It's been a very busy few weeks workwise. While we've still managed to have some good food, there hasn't been any time to catch up on blogging. So hopefully, I can run through all the stuff I have to post.
Here we have a pretty typical dinner with meat from the freezer and CSA vegetables. Josh had prepped the veg and had it roasting in the oven when I got home. And the meat was already defrosted, ready to go.
Here we have lamb chops, yum. I season them with s+p, then sear them in a cast iron, and slide them into the oven til they are done. Then they rest, I slice them up, and they are especially delicious. I prefer to buy either Colorado lamb from Dekalb Farmers Market or local lamb chops, though the Colorado ones are the meatiest. They are a very easy satisfying dinner.
McMullan Farms carrots and turnips. It's pretty hard to keep up with everything that we get from the CSA each week. This includes some veg that we had had for more than a week.
Tomatoes in January! It's nice to have a farm with a hot house. We enjoyed tomatoes all the way through late January. Here, I just chop them up and add a bit of s+p.
We also got a couple handfuls of French breakfast radishes. These aren't as peppery as some radishes. I slice them thinly by hand (which is why they look inconsistent) and then I toss them with s+p right before I bring them out to the table. They weep and soften a little. I think we had these with dinner every night for like two weeks.
Lastly, salad. We get an abundance of lettuces each week. It's hard to finish it all but we try. I have to admit that with the long days at work, I still don't cook every night so we have a salad every night that I cook. i know Josh is happy about that.
Each time I make the same dressing, but Josh says he still likes it. Just dijon, smashed garlic, champagne vinegar, and evoo.
