Part of the plan for making the leg of lamb was using the meat for souvlaki. So we bought pita and I made tzatziki and sliced up some cold lamb. Piled my pita with lamb, tzatziki, red onion, cucumber, and tomatoes. Make a huge mess as you eat. Done.
It was pretty good, but incredibly messy. Our small leg of lamb didn't really yield that much meat, which maybe wasn't a bad thing since we went out of town for the weekend and ultimately, the remaining carcass is still in the fridge. Let's see: I cooked it on the 18th. And today is Oct 1. 13 days. Don't think it's salvagable. Bad me. :(
And we had branzino again. It's hard to not get it when we go to DFM and they have it there. For cheap. So again, we got a one pounder and I roasted it. Except this one seemed thinner so I went with about five minutes less cooking. That was a mistake, so I put it back into the oven for ... yep, five minutes. I did forget to make a salsa verde though. It was still good.
I have to go to DFM tomorrow. Perhaps another fish in my future...
