The best souvlaki
I guess it's funny to suddenly restock the freezer with a whole lot of local lamb and then defrost a chunk of Colorado (but yum) lamb. We used it to make souvlaki.
L+H gave us some H&F pita. What else do you do with pita? I whipped up some tzatziki and marinated the lamb chunks in my normal garlic, oregano, lemon juice, olive oil mixture. Then I sauteed them, added generous slathering of tzatziki, added chopped red onion and bam! Check that tastiness out. Yum.
Best damn souvlaki ever. Will probably never be able to have pork souvlaki again.
