Paella

Josh had been asking for paella for some time and one Saturday night, we did it. I have a few paella books so I rifled through until I found one I liked. It called for chicken and shrimp -- I planned to use some of the fresh shrimp Gena had sourced for us from a local shrimpman. There was no chorizo in the recipe.


I can't really remember what was in the recipe, except that it was different from any other paella that I've made before. I used the big paella pan for two reasons. 1. The little pan has completely rusted out and 2. I figured the big one wouldn't overflow.

Here's the paella as I put in all the broth and set it to simmer on the stove.

I learned finally that a traditional paella pan won't sit flat on a flattop. Apparently they make ones that will! Amazing.


The broth cooks away gently and the paella really starts to take shape.


Done! It was pretty tasty. Clams, shrimp, chicken. The soccarat wasn't quite intact, but it was crunchier on the bottom. I wish I could say that I learned something but i have already forgotten it all.

I did re-oil the pan though when I put it away. Just in case.
