Mac n cheese

I have long wanted to make mac n cheese. I used to be really afraid of it, but then I found out that you make a bechamel, add cheese, stir, and then add pasta. Then you stick it into the oven to brown on top. What's so hard about that?

So tonight, I decided to do it. I went with a Cracker Barrel sharp cheese, because for some reason, I have it in my head that everyone says to use regular sharp for mac n cheese and not extra sharp which is what I always buy. Actually, that goes back to days eating cheese and Jeff-bread at the DeMunns. But I digress.

So I made my bechamel and let it thicken. Then I added the grated cheese, and added salt and pepper to taste. Then I added the pasta, mixed, poured it into a thing, and stuck it into the oven until browned and bubbly.

And I have to say that it was horrible. The sauced thickened so that it wasn't creamy anymore and well, it was just meh.

So mac n cheese is hard after all. Guess I should go find a recipe.
