Our neighborhood Whole Foods (Sandy Springs) has been upgrading their seafood case. We were excited to see an increase in their whole fish a few months ago, especially when it started to include branzino.
When we went just after the new year, we saw that they rearranged the order of the case and also had four different kinds of oysters. They looked so good, so we got a dozen each of the giga moto (top picture) and then I can't remember the other name.
All the oysters were really easy to open with big hinges but the oysters themselves were pretty dry of liquor, which I believe is an indication that they have been out of the water too long. But the flavor -- they were still so delicious.
Yesterday, we had a friend over for dinner and we got three dozen oysters. They were great.
Great to have access to great oysters! They aren't cheap, even opening them myself, but at least we can find them now.
