Whole fish!
Josh came home Monday night. I really thought he would want some home cooking, so I headed over to Whole Foods after work to pick up some protein. Man, it sucks going over there after work!
Most of the fish was kind of meh looking. They had whole red snapper, but they were all a little on the big side. I asked the guy behind the counter if he thought one of them would be too much for two people. He said he thought it would be perfect. Looking back, I think he eats more than I do, and that's saying something.
Anyway, the fish was already cleaned. I scaled it and cut off the fins (which are only good to eat if you are steaming). Then I did my normal olive oil, s+p and stuffed it with lemon slices, onion, and thyme.
I told the guy that I normally roast at 400 for 20 minutes and asked if he thought it would be the same. He thought 25 minutes. I meant to slash the fish, but I forgot. And in the end? 20 minutes, same as always.
I ate mainly fish, but Josh also had a small salad and some green beans. I started off with the large fish head, as usual, and a generous dousing of my salsa verde, which I am really really loving. The thing is, I can't put salsa verde on anything but fish because otherwise I feel like it tastes weird.
I am weird. I know it.
