It's a long time between visits to Fat Matt's, longer than I like, really. A discussion about barbecue at the office sparked my craving for Fat Matt's and when I suggested it and Josh offered it for Saturday lunch, I jumped at the opportunity.
Fat Matt's opens at 11.30 on Saturdays but our timing put us there closer to noon. This meant that the first wave was already eating and when we got to the counter there was no line, but parking was a bitch, as always, We were fortunate to find a parking spot on the hill, right next to the dumpster. In any other place, I might have considered it to be bad parking, but any spot at Fat Matt's is a good spot.
We got the full slab since we intended to split it, as usual. The ribs were meaty and fallin'-off-the-bone tender. My favorite part is the end piece where all the fat is. It's the most unctous. I was a good girl and took off most of the visible fat though. I never use the provided sauce though. I prefer to dip my ribs into the baked beans.
To this day, I haven't found any baked beans to rival these. They are just damn good. My coleslaw on this day was a bit on the dry side sadly, and my pieces were kind of big. When Josh was finished with his and there was some left in the ramekin, I mixed it with mine and it was better. :)
No trip to Fat Matt's is complete without lemonade. It was a little less sweet than usual, which I probably shouldn't be complaining about, but it was still a great counterpoint.
It was a super delicious meal.
