Making fried rice always follows after making Chinese ribs. What else do you do with the extra pork bits? Fried rice is one of J's favorites. He is always happy when I make it.
It all starts out with prepping all the ingredients.
1. Make a pot of rice.
2. Dice up all the pork or whatever meat you are using.
3. Beat two eggs and fry into an omelette-like form. When cool, dice into similar sizes.
4. Wash and cut up the scallions, separating the white and green pieces.
Once all the pieces are ready, heat up your wok and add oil. When hot, start by adding the pork. Fry about a minute until heated through.
Next add the egg. Mix and let cook.
Next to be added are the white pieces of the scallions.
Last comes the green pieces of the scallions. We separate the scallions because the white pieces take longer to cook.
Once those are all mixed together, add the rice, more oil, and salt.
Once you mix everything together, taste. And here you have it: your fried rice!
