Chicken Marsala

Last week, J asked for chicken marsala. It's one of his favorites.

It starts off with one whole chicken breast split into two (one each!), and sliced onions and mushrooms.



Salt and pepper the chicken and then brown each side in a pan. Move to a plate. Put onions and mushrooms in the pan. Let cook until almost all the water that comes out of the mushrooms has evaporated. Add 1/4 cup or so of marsala and cook until almost all of that has evaporated. Add chicken stock, chicken breasts, and any juices that collected. Cook about 12 minutes total, flipping chicken breast halfway through.

It takes a pretty long time so allow at least an hour just for the cooking time. When you are done, and you make way too much pasta, it will look like this!
