Dinner and a snack

The quickest dinners remain those where I come home and some meat has already been defrosted. On this weeknight, it was a three-bone Eden Farms pork rack that we got at Dekalb Farmers Market. If you recall, I said once that the meat guy at Star said that they also use Eden Farms but we didn't really believe it. I would believe it now. Except that they butcher the meat when they receive it at Star and at Dekalb, it's just kind of left as it is.

In some cases, that means there is more meat and fat. More meat and fat is never a bad thing. But it also means that when it's time to slice the meat into two chops, you can't get through the bone at the base. I had to pull out my cleaver.

Still, it was delicious and tasty. I got the two-bone piece and I was a happy camper.

Josh boiled a very large "yukon gold" potato so I smashed it in the pan after I took the pork out and then added a very generous topping of chopped parsley and the last of our Il Bel Cuore evoo. I think this was actually a white potato because of the texture. Still, it was good.

We also have gotten a lot of broccoli from the McMullan CSA. I took one bag and put it into the oven with s+p+oo to roast. A delicious dinner.

We are up to our ears in vegetables. Sometimes I think that we shouldn't have subscribed to the CSA because we are really struggling to eat through it. I'm happy to have the broccoli and carrots and lettuces, but damn, all that pac choi. What the hell do you do with it all? We haven't really figured it out either.

Lastly, a snack that we had last night. We had gone to Whole Foods for the bufala mozzarella and Josh also picked up some good looking heirloom tomatoes. After the late lunch we had had at Red Pepper Taqueria, we weren't very hungry but knew that we would need something to eat. So I sliced up one of the tomatoes and one of the bufala balls and we enjoyed them with fleur de sel.

I also bought some pretty stinky brie, some granny smith apples, plus an extra mozz ball. Yum!
