It's been a long time since we've been to Star Provisions but it's definitely obvious that the meat quality at the other markets is so far interior that it's insane. The beef cuts lack a real 'meaty' taste, and the lamb chops we have access to are 3/4 gristle and fat. Maybe more. The pork is decent but poorly cut making serving a nightmare.
And so, this is what our trip to Star Provisions resulted in.
Note: Star Provisions no longer sells wine. This is both good for the wallet and bad for finding new inexpensive but reliable recommendations on wines.
1 mini lemon meringue
1 nut-less brownie
2 peanut butter cookies (for j)
4-bone lamb rack
1 duck breast
1 lb hangar steak
4-bone pork rack
1 package Anson Mills grits (which was about 1/2 off!)
This list is pretty long, but we have been eating less meat per serving, which is good. The lamb rack, though pricey, will be very satisfying. Both the hanger steak and pork racks will be halfed, foodsavered, and frozen for future dinners.
I recently made the caesar salad out of James Peterson's Cooking which I borrowed from the library. It's simple and very good.
Use whole romaine leaves and just the hearts of course. Then rinse and spin them dry. Make your own croutons however you like and soft boil an egg for two minutes. Peel and crush a clove of garlic and then wipe the inside of the bowl with it. Discard garlic and add romaine. Scoop the egg out of the shell onto the green. Add 2 tsp dijon mustard, 1/2 tsp salt, 1/6 cup olive oil, 12 whole salted or canned anchovies (soaked in water for 5 min and then dried if salty), 2 tbsp red or white wine vinegar, 1/2 cup grated parmegiano-reggiano. Mix. Top with croutons and pepper. Serve.
