A day at home

Well, it's definitely clear that I just do not want to go shopping. In fact, today I didn't even make lunch -- first meal of the day -- until 3. Oops. Josh was craving Chinese food, so he went to the store for some supplies. While he was there, he picked up some stuff for sandwiches.

I tossed together one of my classics: this roast beef with caramelized onions and blue cheese on toasted bread. It was pretty tasty and sizable. Served with my bread and butter pickles.

I lucked out and was able to dig both a chicken breast and flank steak out of the freezer. The problem with both of these things is that I don't write them down on the list so I'm not really sure how many I have left. I haven't bought any in a while, so it's probably time to stock up.

Beef with scallions is Josh's overall favorite, I think. It pretty much comes out the same every time although the beef was a little over-corn starched. Also, to save time, I didn't do any saucing and I think it was a mistake. Sad panda.

We originally planned to make chicken with Chinese eggplant, but the Publix doesn't have Chinese eggplant. So I created a new dish using dried shitakes. I soaked them in hot water to get them soft and then sauteed the chicken and then the shitakes, adding in some of the reduced mushroom juices at the end and then mixing it some sesame oil when I turned off the heat.

The balance was pretty decent and the chicken was tender, but I should have sauteed the shitakes some. I forgot to do that. I think the sesame oil worked out pretty well.

And then for me, beef with tofu and black beans. The best of all worlds. Again, a little too much with the corn starch (since it was the same mixture) but otherwise, it was even a little bland. Still, that meant the taste of the tofu comes through cleaner. Not so bad. I liked my big chunks of tofu.
