Cookin' like a fiend

Well, it's Sunday. I often do a lot of cooking at once on Sunday, usually to the detriment of our dinner, since it gets pushed back until late. Today however, we decided to finally eat the corned beef that's been brining in the fridge which gave me a nice three hours to prep some stuff for the week.

peppers 'n onions -- it's the slow cooking and carmelization that gives it the sweetness that I like on top of my sausages. And speaking of sausages, I got called over by this nice lady at publix (she liked my pixie cut!) to try some Bruce Aidell's sausage and it was pretty damn tasty. We bought a package of the chicken n apple (for me) and some habanero and green chile for j. We'll have those later this week.

lau bok goh (daikon cake) -- I typically make this for new years, but had some logistics problems this year. So I made it tonight to use up the daikon and the shitakes that I soaked. I also cooked down the shitake broth for use in a soup later on.

Ziti -- Used up most of the leftover meatloaf and a couple boxes of Pomi chopped tomatoes to make three trays of ziti: one for this week and two for the freezer. Those Pomi tomatoes taste as good as the San Marzanos we usually get. Of course, all of them are about $2 per container, so not much savings there.

Plus, I cleaned out the fridge and a good thing too because I wouldn't have had room for all that stuff!

Anyway, it's about time for bed. And my feet really hurt!
