Thanksgiving!

Happy Thanksgiving!

Our menu was as follows:
- 10 lb young Butterball turkey
- Rice and chestnut stuffing <-- the best
- Cornbread
- Cornbread dressing
- Turkey giblet gravy
- Creamed corn (J made it!)
- Mashed Potatoes
- Mashed Sweet Potatoes
- Cranberry jelly (of course!)
- Lima beans cooked in day-long-simmered pork stock

So, I was not too pleased with my cornbread or its resulting dressing. The cornbread, I found, was a little too dry and not sweet. J likes it though so I guess it's okay. For the dressing, I used a recipe from The Joy of Cooking. It was the only recipe I could find that didn't have nuts or oysters or something weird. However, it did call for green and red peppers so mostly we felt like we were eating the filling from deviled crabs. Next time, I will leave out the peppers and go with more stock.

I am happy to report that I have finally mastered GRAVY!

I do not know what I have struggled with gravy making for years. It's really very simple. I can only say that it must be all this practice with gumbo that finally made me grasp how easy it is.

Well, turkey day is over, so let all the turkey leftovers begin! Already up on the menu: turkey chili and turkey pot pie. Yummmms.
