Well, J and I went to another Asian market today that specializes more in Japanese and Korean items. They have freshly made noodles, tofu, kimchi (ew), etc. there. We picked up some tofu for a nice kitsune udon and a whole array of pickled items. We also saw massive amounts of noodles which I had to restrain myself from buying.
After our shopping trip, we hunkered down in the restaurant area for some lunch. I had some jabchae which is very tasty! They wre labelled as sweet potato noodles, and the sesame oil made it very light and tasty. There were also some sprinkled toasted sesame seeds on top. We ran back in to buy some, but all we could find were yam noodles. I hope they are the same thing.
Tonight for dinner, I made dashi (bonito flakes + kombu) and then hot broth for noodles. Add in some wakame, a little fish cake, and some tasty udon and you have a good meal! Of course we didn't stop there. We also had some yummy edamame (so healthy) and some "stewed tofu" which really seemed like fried or pan-fried tofu with chili sauce. We also tried a little of each of the pickled items (daikon, eggplant, two kinds of cucumbers, etc) and ... I just have to say that they are not for me.
Saturday, J and I went to a vietnamese tofu shop and grabbed some Vietnamese sammiches and spring rolls for lunch. Two sammiches + two spring rolls + two 20 oz sodas = $10. Anyway. Those sammiches were very tasty and they had lightly pickled carrots and daikon which I think I certainly prefer over the packaged pickled stuff we got today at the market. I wonder if we can buy that or if I have to start pickling things...
Anyway! I am glad to see that a mostly healthy meal (perhaps too much salt on the edamame) is still filling and tasty! J and I are trying to eat healthier. Hooray!

Chances are decent that yam noodles and sweet potato noodles are the same (or similar). The words are used interchangeably here in the US. But technically, yams and sweet potatoes are different. As always, Wikipedia knows all: http://en.wikipedia.org/wiki/Sweet_potato
